親子丼.

Oyako don.

INGREDIENTS.

½ small leek

1 onion

2 dried shitake mushrooms ( soak in hot water and keep for later )

2 chicken thigh

2 eggs

1 tsp dashi

2 tbsp mirin

½ sugar

INSTRUCTIONS.


1. Cut the leek diagonally, slice the onions and mushrooms.


2. Cut the chicken thigh into medium sized cubes.


3. Heat up the oil on medium to high heat.


4. Throw in the chicken.


5. Followed by the onions.


6. And the leek and mushroom.


7. Add in the water from the soaked mushrooms, along with the dashi, mirin and sugar. Simmer for about 10 minutes until the chicken is cooked.


8. Beat the 2 eggs and pour it on top of the chicken mixture.


9. Cover the pan until the egg is set.


10. Top it on top of the rice, sprinkle some shichimi and いただきます.
