Ondeh ondeh.
INGREDIENTS.
280g glutinous rice flour
200g sweet potatoes
2tbsp tapioca flour
1 pandan leaf
4 drops of green food coloring
Palm sugar
Sugar
250g grated white coconut
INSTRUCTIONS.
1. Boil the sweet potatoes and the pandan leaf until cooked. Keep a little bit of the water that was boiled with the sweet potato for later use.
2. Remove the skin from the sweet potatoes and then mash.
3. In a mixing bowl, add in the glutinous rice flour and tapioca flour along with the mashed sweet potato and a little bit of the leftover water from earlier. Also add in the green food coloring whilst kneading the dough.
4. Knead till the dough has a smooth like texture. If it is too dry, you can add in more of the leftover water.
5. Take a small lump of dough.
6. Roll into a bowl and using the back of your index finger, make a small flat hole.
7. Put the palm sugar and a little bit of sugar in the center and seal well.
8. Re-roll into a ball using both palms to get a smooth texture.
9. Repeat the steps.
10. Boil water in a large pot. Drop the balls into the boiling water. They will rise to the surface and when that happens, leave it to boil for another 2 minutes to ensure that the sugar inside has melted.
11. Scoop up the balls with and strainer and coat in the grated coconut.
