Fried curry pockets.

INGREDIENTS

4 slices of white bread

2 tablespoons of leftover Japanese curry

2 tablespoons of mozzarella cheese

1 egg ( beaten )

Panko ( Japanese style bread crumbs )

Oil ( for frying )

INSTRUCTIONS 

1. Cut off the crust from the bread.

2. Flatten the each slice of bread with a rolling pin.


3. Take one tablespoon of curry and one table spoon of cheese and place it in the middle of the slice.


4. Take another slice of bread and place it on top like you would make a sandwich. Take note not to press down on the filling as you don't want it to spread.

5. Using a standard sized mug, press down firmly until the remaining bread has been removed and then carefully remove the pocket from the mug.


6. Take the pocket and dip it into the egg.

7. Roll evenly in the panko.


8. Heat oil on a medium-high heat and then fry until golden brown.

9. Line a plate with paper towel to drain the excess oil.
