My number 1 favorite type of noodle has to be udon. 

It's extremely versatile. You can dump it in soup, stir-fry, have it with curry and it literally goes with pretty much any sauce.

One way I actually like to have my meat sauce or better known as bolognese is actually with udon. It pairs way better than spaghetti does imo.
